Quick Pickled Vegetables

Making pickled vegetables at home requires little effort, but they add an instant boost of flavor to any dish. I recommend adding them to salads, tacos, or serving them as a side with your favorite meat!

Ingredients:

  • 1/2 cup apple cider vinegar 
  • 1 1/2 tsp salt 
  • 1 tbsp raw honey
  • 1 medium red onion

*For pickled cabbage use the same liquid measurements and slice 1/4 head of the cabbage into thin strands.  

Steps:

  1. Slice of the ends of the onion. Using your spiralizer, create long thing strands.
  2. In a mason jar, whisk together apple cider vinegar, salt and honey.
  3. Add in the spiralized onion and let sit at room temperature for at least 4 hours before serving, or refrigerate overnight.
