Flank Steak with Roasted Asparagus

Growing up as a picky eater made it hard for my parents' to please me. Flank steak was the only way to win me over. Now that my palate has matured, I love experimenting with new marinades to compliment my favorite childhood meal. This marinade is sure to make flank steak your favorite too!

Prep Time: 5 Minutes         Cook Time: 9 minutes

Ingredients for Steak:

  • 1 pound of Flank or Skirt Steak
  • 1/4 cup of balsamic vinegar
  • 1/4 cup of red wine vinegar
  • 1/4 cup of gluten free tamari
  • 2 tbsp dijon mustard
  • 1/2 lemon
  • 2 cloves of garlic
  • Salt & Pepper

Ingredients for Asparagus:

  • 1 bunch of Asparagus
  • 2 tablespoons of olive oil
  • Salt & Pepper

Steps:

  1. Place flank steak in a large mixing bowl.
  2. Add balsamic vinegar, red wine vinegar, dijon mustard, gluten free tamari, garlic, salt & pepper and squeeze the lemon juice.
  3. Using a fork, coat both sides of the meat.
  4. Cover and place in the refrigerator for anywhere between 8-24 hours.
  5. When you're ready to cook, pre-heat the oven to 350 degrees.
  6. Place asparagus on a large baking sheet and season with olive oil and salt & pepper. Cook for 12 minutes, flipping after 6 minutes. 
  7. In a large pan, cook the flank steak for 2-3 minutes on each side over medium heat.
  8. Place the pan in the oven for 5 minutes at 350 degrees.
  9. Let the meat sit for 10 minutes before serving.
  10. The meat will be medium-rare in the middle but if you'd like it more well done, cook for an additional 2 minutes in the oven.
