Growing up, my dad was famous for two desserts: apple pie and chocolate mousse. Traditional chocolate mousse is very complicated to make because it requires tons of patience and lots of different steps. This chocolate avocado mousse is much healthier and easier to make (it takes 5 minutes). Plus, it's completely vegan and refined-sugar free!
**For best results, refrigerate the coconut cream for up to 1 hour before serving.

- 1 large ripe avocado
- 1/4 cup cacao powder
- 2 tbsp pure maple syrup
- 1 tbsp vanilla extract
- 1/2 cup coconut cream
- Add everything into your food processor and blend until smooth.
- You can eat it right then, or you can put it in the fridge until you are ready to serve.
- Top it off with fresh fruit, unsweetened coconut flakes or cacao nibs.
