Last week at the farmers market, we bought beets in order to make an arugula, beet, and goat cheese salad. We had so many beets leftover and I didn't want to waste them. Since we already had lemons, tahini and garlic I threw everything in the food processor and made this amazing dip in less than 10 minutes. This 5 ingredient recipe is the perfect dish to make if you want to make something for a larger group. I recommend serving it as a crudité platter with your favorite veggies!
Prep Time: 10 minutes
- 3 cups of cooked beets
- 1/3 cup of tahini
- 1/2 lemon
- 2 cloves of garlic
- Himalayan sea salt
- Peel the garlic cloves.
- Place beets, tahini, garlic cloves and lemon juice in the food processor.
- Blend on high and season with salt while the food processor is still going.
- Process until the consistency is smooth. Add more lemon or salt, if needed.
- Serve with your favorite veggies (radish, carrots, tomatoes).
