Beet Dip

Last week at the farmers market, we bought beets in order to make an arugula, beet, and goat cheese salad. We had so many beets leftover and I didn't want to waste them. Since we already had lemons, tahini and garlic I threw everything in the food processor and made this amazing dip in less than 10 minutes.  This 5 ingredient recipe is the perfect dish to make if you want to make something for a larger group. I recommend serving it as a crudité platter with your favorite veggies!

Prep Time: 10 minutes        


  • 3 cups of cooked beets
  • 1/3 cup of tahini
  • 1/2 lemon
  • 2 cloves of garlic
  • Himalayan sea salt 


  1. Peel the garlic cloves. 
  2. Place beets, tahini, garlic cloves and lemon juice in the food processor.
  3. Blend on high and season with salt while the food processor is still going.
  4. Process until the consistency is smooth. Add more lemon or salt, if needed.
  5. Serve with your favorite veggies (radish, carrots, tomatoes).
